this delicious blackberry sorbet….
adapted from The Ultimate Ice Cream Book by Bruce Weinstein
1/2 cup water
1/4 cup corn syrup
3 cups blackberries
1tbs fresh lime juice
3tbs raspberry liqueur (optional, but delicious)
Combine the water, corn syrup, and sugar in a small saucepan and heat over medium heat stirring until the sugar dissolves. Raise the heat and boil without stirring for 1 minute. Turn off the heat and let mixture cool completely.
Put sugar syrup, blackberries, lime juice and liqueur in a blender and process until smooth. We strained ours so there wouldn’t be any seeds, but its up to you. Cover and refrigerate until cold.
Stir and freeze according to your machine’s instructions and enjoy!
